Energising Magnesium Rich Beany Mexican Chilli

A hearty vegetarian bean chilli high in magnesium a sure fire winner to boost your energy levels.

Serves 4


  • 400g of mixed beans
  • 400g Kidney beans
  • 200ml Passatta
  • 400g can of chopped tomatoes
  • 200g sliced mushrooms
  • 1 large onion
  • 1 green chilli chopped
  • 2 cloves of garlic
  • ½ tsp of chilli flakes
  • 1 tbsp fresh Basil
  • 1 tsp Oregano
  • Lemon juice
  • 1 tbsp Soured Cream


Saute the onion in olive oil until softened then add the garlic and chilli and mushrooms
Fry gently for 5 mins or until the mushrooms are cooked
Add the mixed beans, kidney beans, passatta, chopped tomatoes, chilli flakes, oregano and basil and cook for 15 mins or until beans are cooked and have gone a little mushy
To serve add a dash of lemon juice and add a dollop of soured cream

Serve with Brown Rice
